Sunbutter chocolate chip cookies (Gluten/Dairy/Nut/Egg free)

Due to recently finding out that my son has an almond allergy, I have to stop baking with almond flour and almond butter.  He also has an egg allergy.  So, I'm having to tweak one of my previous recipes.

Ingredients:

  • 3/4 cup sun flour butter 
  • 1 banana (mashed)
  • 1/3 cup honey (can sub real maple syrup)
  • 1/2 ripe avocado (or 1 egg)
  • 1 Tbsp. vanilla extract
  • 1/2 tsp. baking soda
  • 1/2 tsp. baking powder
  • 2 Tbsp Coconut flour
  • 1/2 cup dairy free chocolate chips (such as Enjoy Life brand)
Directions:
1. Preheat oven to 350 degrees.
2. Oil baking sheets or line with parchment paper.
3. Stir together first 9 ingredients. Mix well. Make sure honey is fully incorporated.
4. Add chocolate chips and mix until well combined.
5. Scoop tsp sized balls onto baking sheet. 
6. Bake 10-12 minutes or until lightly browned.  The top of the cookies will be very soft.  Let them sit and cool a few minutes to set before moving them to a cooling rack.
